OK, here's the solution.
First...get Snagit. I don't know if all version do, but the current
version (5.1) allows you to enter a number of simultaneous swaps.
Select Filters -> Color Substitution -> Custom Color Substitution.
Now, a menu is copmposed of 4 shades.
The background has a value (out of 0 - 255) of 192, 192, 192
The black lettering is 0, 0, 0
The gray lettering is actualy two shades 127, 127, 127 and 224, 224,
224.
