You ought to be able to do this with the RD fields in Word.
1. Create a separate Word file for each separate document you want.
2. Enter the RD fields to pick up chapters you want to include in each
document.
3. Probably best to have all the chapters and all the Word files with the RD
fields in the same folder.
I've been using the RD fields to create long books for a while (instead to
the dysfunctional master document nonfeature of Word). While I've never done
it to create multiple versions of a document, I don't see any reason why it
wouldn't work.
There was a discussion of using the RD fields in here not too long ago, so
you should be able to find some detailed info in the archives.
