I usually document the fields in the order of appearance with. When I
explain the field (see example):
Contract amount - a display only field, used to display the amount of the
(something) contract.
I feel the field may be display only but the users may still need to
understand what the field is. The document will also flow better for the
user, if the fields in the documentation flow the same way as whats
displayed on the screen.
