Not if you mention in your document that the screen
shot serves as an example, and you mention what can go
in those fields. Else, if you are documenting a
specific process, perhaps the entry needs to be one
thing specifically...

Well, if there's oppostion to leaving the fields in
the screen shot empty, populate it and make mention in
your documentation that the screen is an example and
that actual data entries will vary depending on what
the user needs to do.
I know you're trying to save yourself some work, but
if the higher-ups feel that every screen needs to be
populated with correct data, then you should include
different shots of the same screen with the correct
data elements populated.
