I had to go for 'other' as there is no traditional product produced and, even after 18 months, it's still feels a bit strange! Up to my current job I've always worked somewhere where I access to the hardware/software. In my present job the final product is IP - there is no physical product, just a design. In some ways I'm using my editing/design skills more than my writing skills acting as an editor while building up my 'product' knowledge. Fortunately I work with a good bunch of engineers and most can write good English as well!
Where there IS a proper product I feel that it's essential to get hands-on experience. Even that doesn't always help create better manuals. One job I worked on was the user documentation for sonar system and what we ended up producing was reference manual - we were told that we could only tell them what it could do, not how to use it.
