I spoke to a couple dozen recruiters (and one hiring manager) during my recent job hunt. No one asked me what I _had been_ paid at previous jobs (and I didn't put it on the resume!). However, all of them asked me what I WANTED to be paid at the new job.

If only I had held out for more vacation days.....

I suppose you could just make up some number -- the amount that you would
like to have been paid. If they later found out that you were paid less
than this, you just answer, "Really? I'm so terrible with numbers...I will
have to talk to my acocuntant about this."
