You probably know this, but, in case you don't: there are editors that are
intermediate between text editors and WYSIWYG environments, such as Bluefish and
Coffeecup. In these editors, you can select items from menus, including details
such as the number of rows and columns in tables, but you are always working
within the code itself.
Personally, these are my tools of choice for HTML. They reduce the drudgery and
the possibility of error typical of a straight text editor, and are almost as
convenient as WYSIWYG editors without any of the idiosyncrancies commonly
associated with them.
