One thing I would emphasize in such a course is that a little learning is a dangerous thing. It's great to know some of the vocabulary of design and to learn some of the principles, but that doesn't make a horse's tail a leg. The writer who completes your course should leave with enough humility to be willing to call on a professional designer when needed and a general understanding of when that might be.
