Hmmmm. I've never been asked to do any writing specifically about something I have ethical objections to.
I did once work for a company that did things I ethically disagreed with (spamming), but the reality of bills dictated that I simply & quietly find a new job rather than quit immediately in a huff.
On the other hand, I've been faced several times with a different dilemma. What if your job is not unethical but boring as dirt? And not just a single boring assignment, since we all get those, but always and for the foreseeable future a snoozer. Between being appalled and being bored, I might just pick appalled!
Besides, with all this talk of pornography, I can't resist tossing in this small fact:
Did you know that erotica and technical writing are the only genres to have professionally published lists of "acceptable" verbs and nouns, and which noun goes with which verb? Compare the MS style guide to "How to Write Erotica" sometime.
I've never quite looked at my job the same way since. :>
