Styles - creating and modifying
Templates - ditto
Page and section breaks - knowing how to, and knowing the difference
Page numbers - basic familiarity with how to
Headers - ditto
Inserting graphics
Inserting files
Importing/pasting text from other sources and.or different file formats
Auto-correct
Auto-format
Auto-text
Tables - creating and formatting
Special characters
Tracking changes

Awareness and workarounds for some of Word's bugs/features/challenges:
things like numbering, setting styles to auto-update or not, etc.

I'd look for somebody to have most/all of these if they're selling
themselves as an "expert" user. But I don't know that you'd have to be an
expert Word user to be a good copy editor - that's up to the employer.
