do you normally use and for what purpose?

The answer is "as many as you need." This is not meant to be flippant, but
the section needs of any document can vary widely. You should use breaks, as
necessary, to meet the goals of your document.

In what situations do you use the following Section Breaks:
Allen says:
Continuous. Use this type of break whenever you are changing margins or
column layout in the middle of a page.
Next page. Use this when you want the layout changes to force your document
to the next page. For instance, when you want to change margins but not have
it affect the current page.
Odd. Typically used for starting new chapters/sections that must begin on
the next odd page. Used extensively for book-type layouts.
Even. Opposite of the "odd" section break. I don't think I have ever run
across a need to use this one, but it is there in case you do need it.
