What's your question?
Don't you normally make the book pitch before you start writing anyway? From what I understand, you secure a publisher first by selling them your idea, then you begin writing. You do this for two reasons.
* You don't want to waste your time if no one is interested
* You don't want to have to rewrite the book to match the publisher's style and format
If this is your first book, you'll want to do a little research on freelance writing, writing book proposals and submitting manuscripts. My personal advice is don't go with a vanity press, or a print-on-demand press. The quality is little more than a photocopy, and even though they _say_ they'll help you market your book, they actually do very little. The marketing will be left up to you.
But then again, if you are being a co-author, maybe the person that has contacted you has already secured a publisher?
I could be wrong on this. I haven't published a book, so I only know the process as described by various articles published through the many writer organizations.
