I know, because I have it here, that the Info Mapping template is
table-based.

Although you might be able to cobble something together using text
boxes, I think your best bet is to define a two column table for each
text block.

This will reduce the problems you get with multi page tables.

A simplistic method of dealing with this is to create a template
document with the various block formats you use. Make it a read-only
so you don't inadvertently edit them. Then copy and paste as needed to
the working document.
