Comparing Cajun and Quebecois Joual to a Pidgin English is not correct.
Those languages are actually creoles. There is a technical
difference between a pidgin and a creole (according to my 1st-year
linguistics textbook, anyway): a pidgin is the variety of a language
invented by those whose first language is other than the new language
they are learning (and rendering as a pidgin). A pidgin has a limited
syntax and vocabulary, and a limited ability to express subtlety and
nuance. It is, in short, not a full language. A creole, on the other
hand, is the magical thing that results when a pidgin is taught as a
first language. Suddenly, the vocabulary expands, and the speakers
have (or invent) the structures needed to express all necessary
concepts fully and exactly.
There are, therefore, several varieties of "creole" French -- if we're
being technical about it.
