So I'll ask the group: What single course proved to be most useful in your
technical writing work? For me, it was a course in Technical Illustration,
which gave me a lot of skills I never would have picked up any other way.

A couple come to mind:

Alternate Dispute Resolution (ADR). It really revealed the gaps in my interviewing skills, made me think about ways to get information people sometimes don't want to give, offered tips on giving feedback positively, and gave me some negotiation techniques. I was so excited after this 4-day course, the next day I ripped the deck off my house.

I attended an excellent Web usability seminar in Toronto recently. People at work still don't listen to me, but now I know more about what I'm talking about.
