Be polite and honest. You owe it to yourself and
everyone else.
Thank the interviewer for their time and tell them you
don't think you're the right fit for each other. In
the specific case of the "mis-labelled" job, I said
something to the effect of: "Well, I appreciate your
time, but it doesn't sound like I have the background
you need." Which was followed by a bunch of apologies
on the interviewer's part, but he knew I was right
.... No worries.
(Although, the polite and passive approach failed me
once when they came back to me with more money ... so
I had to firmly decline the second time, though I was
still polite.)
