No, I don't recommend you do this for all the software you know. I
might have been unclear in my previous post, but I strongly advocate
the use of custom resumes, and I intended to suggest listing the
common applications (like Office apps and relevant authoring tools)
and then specifically the technologies the company is looking for.

A 2-page resume is normal.
I don't know if I can constitute this as a trend, but among all the
managers I know, length of a resume is only an issue if it's a page or
less or longer than, say, 5 or so pages.
This is an employer's market. We like to know as much about candidates
as is appropriate and manageable, because in an ideal situation we'll
have 6-10 amazing candidates to bring in for an interview. It would be
most unfortunate to overlook a perfect candidate because the resume
was trimmed too short to give us any real picture of the person, or
too long and full of extra info we don't need.
