There's no need to risk the problems that Shlomo and others note in Save As > PDF, just because printing to PDF seems to take longer.
Search Acrobat help for "Watched Folder." You print a PostScript file into a watched folder that invokes Distiller and applies a specific .joboptions settings file to the PDF conversion. You can create different watched folders for different PDF results, such as press, smallest file, etc.
Because your concern is the processing time difference, while the processing time is the same for a watched folder and manually running Distiller, authors can return to work as soon as the PostScript file print job is complete - the watched folder mechanism takes over the work.
If you need to create several different PDF qualities, you may save time in the long run with watched folders, by moving the single PostScript file into the In folder of each watched folder whose output you need. It's probably possible to automate this "multiple handoff" process with some kind of scripting tools.
I recommend printing to a PS file and distilling (using the Adobe PDF
driver). Printing to the PDF port (i.e. having the 'print to file'
un-checked) also has issues with cross-file links. In the systems I use,
the speed of printing & distilling vs Save as PDF or printing to the PDF
Port seems similar.
