I've frequently read of studies (but not seen the actual published science) that claim the results of most interviews are decided within the first five minutes,
I've heard people assert, in all seriousness, that the window is open only for the first eight to fifteen seconds. After that, you can only hurt yourself; you can't do much to help yourself with most interviewers (the preternaturally open-minded ones you occasionally encounter being the exceptions to this rule).
I'm not sure there's much we can do about this other than grit our teeth and do our best. An occasional lawsuit does tend to keep interviewers honest, but few of us have the resources to try this.
For those of us in the US, we generally have all the resources we need. There are state and federal agencies that, after a fashion and often after a delay, will either initiate action on your behalf or guide you in things you can do for yourself, depending on the nature of the problem you encounter. I've had two such experiences myself, both of which ended to my $ati$faction, and neither of which prevented my gaining future employment elsewhere. In neither case did I have to pay any legal fees. Your situation in Canada may be different.
