Hi,
Conversely, number 2 works for me. I'd prefer to recast the entire thing
as plural, but mixing number is infinitely preferable to some awkward
he/she, he, she, or both, it combination. There are a bunch of
first-grade grammar no-nos that, frankly, are done without
consideration, so I am not above flouting first-grade no-nos if I have
good reason. If I do break a "rule," I make sure I'm consistent about
it.
Actually, it doesn't bother me, personally, that when the gender is
unknown, English defaults to the masculine. However, I understand that's
an issue. Similarly, assuming gender roles, like nurse being female, is
also apparently insulting. I guess I'm insensitive.

Number 2 drives me up the wall whenever I see it.
Mixing singular and plural in this way was a first grade grammar no-no.
