Although there a quite a few graphics programs to learn, I would suggest you
try Adobe Photoshop. The learning curve can be quite steep, but the payoff
is worth it. Photoshop has become an industry standard. While Photoshop may
be more than you need if all you're trying to do is capture screenshots for
a guide, for everything else it's a wonderful tool.
On it's own, a single license for Photoshop isn't cheap (~$650 for the
basic, full version). There are free graphics programs, such as GIMP, that
provide nearly the same feature set for price that is much easier to
stomach.
Like Henry already mentioned, the best way to learn is by practicing. Just
spend some time playing with settings. It will be daunting at first, but as
time goes on it can become second nature.
