You may be the victim of sloppy editing in the help file. The bold
switch name after the bullet is wrong. The example has it right:
"\* Charformat " -- with a space after the asterisk (note there also
must be a space after Charformat)

I just inserted an x-ref, toggled field codes, and added the switch to
arrive at this (except, of course, that the braces are really those
magic field delimiter braces):
See { REF _Ref242518315 \r \h \* Charformat }.
I made the R in REF blue italic. I then selected the field,
right-clicked and selected Update Field, and right-clicked again and
selected Toggle Field Codes. My x-ref appeared in blue italic font.

Works for me.
Maybe Word just doesn't like you. ;-)
