I say, turn on Structure and use outlining.  I think Structured Maker even includes a couple or three outline templates in Structured Maker.  Just because you turn on the Struct GUI, that doesn't mean you have to use it for all your docs.  Just use it for the docs that need structure.  For unstructured docs everything will be the same.
