Generating Pdfs with hyperlinks has never worked on Mac OS X with any version of Word to my knowledge.
I use Quark, which does a nice job. Apple's 'Pages.app' will do it, if you want a cheaper option, and so will the free LibreOffice too, if I recall correctly.
