I'm a British technical writer based in France and have done a fair bit of
hiring in what sounds like a similar situation.
You don't say whether you are interviewing French writers to work in
English, or English speakers who might or might not already be resident in
France. In either case, the ability to work and communicate within a
linguistically and culturally mixed team will be important - so I would try
to dig into this.
