We'd call the whole thing Informatics, but that trends more towards the
tools that facilitates the process.
The work your person is doing is Data Analysis and the person doing the
work would most certainly be a Data Analyst.
The resultant charts, graphs, & such, would certainly be called Data
Visualization.
I teach a course in data analysis and visualization focused on our tools
that can take just about any SAS data source and create user configurable
charts, graphs and maps. In the class we define data visualization as any
means of presenting complex data in a way that makes it easily understood
by the recipient whether that's a paper graph, infographic, hand drawn
chart, dynamic application consuming live data feeds (think Mozilla Glow),
