I tend to just say that I need some time off. No further explanation.
Sometimes I just say "I need a mental health day." or "I need a day
to play hookey."

When I was working for a company that had laid me off and then rehired
me as a part time worker, I did indeed tell my manager that I was not
available to come in for a meeting because I had a job interview that
day. I figured it couldn't hurt, and in fact it did end up getting my
hours bumped by one more day a week (which at the time was a
significant help to my budget!). I really wanted to stay there, and
they really wanted to keep me, so I figured it couldn't hurt to tell
my boss that hey, someone else wants me too. (Just in case anyone is
curious, that company ended up going under, so no, they never did hire
me back full-time).
