This can be done. Instructions are for Word 2010 but other versions are essentially similar. I don't have 2013 to play with but I do know that 2007 is almost exactly the same in this arae.
Create a new multi-level list as a list style. Get to the part where you can set the number formatting and do this:
1) Click level 1.
2) Make sure that Number Style for This Level is set to (none).
3) In the Enterformatting for number box type "None: "
4) Select Font...and set the font to Bold.
5) Set the number alignment and text indent as you want them. I recomment Left, Aligned at 0" ad Text ndent at: 0.5
These steps are optional but you'll probably be happier with them.
6) Click MORE>>
7) in Link level to style select the paragraph style you want to use for that type of paragraph. Don't use an existing style for this. Make one first, based on Body Text or whatever you use for your main text.
Click OK.
If you opted for steps 6 and 7, just use that paragraph style for Note: paragraphs.
If you didn't, you'll have to use the multilevel list box to apply your paragraph style. It will be in the List Style or List Library area.
Good luck - this can be fragile and tricky to set up, but it does work.
Alternatively, you can create a little graphic that looks like NOTE: and use that as a custom bullet in a bulleted list. Use Define New Bullet, select Picture as the type, and select your graphic.
