AA is the first thing that came to my mind, although I might also add that the mere concept of having more than 26 appendices raises some red flags. You might want to examine whether or not at least some of those appendices make more sense being part of the main body of text.

Subject: What comes after Appendix Z
After many years as a tech writer, for the first time I have a document with more than 26 appendices. How do you identify appendices after Appendix Z? My first inclination is to use Appendix AA, but figured it was worth asking in case someone has come up with a better option or a reason why using AA isn't a good idea.
