The first thing that comes to my mind is to use "AA".
I can only think of two situations in which more than 26 appendices might
be necessary:
1) In some government-type documents, such as municipal bylaws,
2) In some documentation that may have several lists of reference
information. For example, in my lending software documentation, I have
appendices for various loan type codes, loan status codes, field mappings
for various interfaces, etc.
