The nasty suspicious side of me thinks the decision to not use tables for
such things is a business decision. If you can't see all that data, it's
harder for you to figure out which connections to make when and where. That
means you can't plan your own trip. You have to conform to the itinerary
that the "booking widget" concocts for you.

In a couple of ways, it's more cost-effective for them to route you through
as quickly as possible. If you set up your own routing in which you drop
out of their itinerary for a while, you may decide to take a different
company on the next leg of your trip. Also, they have fewer
baggage-handling steps to take; fewer transfers. They're not responsible
for accepting or discharging your property more than once, so it eases
their baggage tracking and reduces their liability.
