A USB display adapter will add an actual second display adapter to your computer and drive the second monitor. It's like adding a second display card to a desktop system.

I did buy an Intel NUC at the same time as the second 24" screen, but have
been procrastinating in loading Widows 10 on it and deploying it. Save for
buying a new laptop, moving forward with the NUC looks like the best way to
go.

what you'll need is a USB display adapter. If your laptop supports USB 3.0,
be sure to get that and not a 2.0 adapter. You want the fastest one your
