MS Word Office 365 Disappearing Header on Windows 10

I'm baffled. Maybe someone here knows how to get around this behavior.
A 20 page Word .docx file has a nice header in it with things like the
company name, the title of the doc, page number field, version number,
etc. This header is perhaps 1.25 inches (height) of content below
maybe 0.25" of blank space to get into the print area.
I work with docs like this one all the time, and when doing something
to one, I need to increment the version number and maybe change some
other formatted text content item. So, I double-click anywhere in the
header, and that gets me into the header. Usually, I can simply edit
whatever I want in there in the exact same way that I would edit
things in the body of the document. However, when I double-click into
this header, ALL of the visible content vanishes. I mean it goes away
as though it had never been there.
A colleague and I are scratching our heads over this. Google has left
us unsatisfied.
