For anyone working in Agile, have you ever been tasked with editing user stories? If so, does performing this task provide any added benefits, such as deeper insight into the project???
Is the task of reviewing and editing user stories better suited for the Project Manager or Scrum Master, rather than the Tech Writer? Where do you draw the line between the respective roles? Or should you avoid drawing a line and just be helpful???

Are you kidding? This is an amazing invitation to participate at the beginning of feature design. You should pay close attention to these user stories anyway, and now you're getting paid to actually study them and edit them! Not only do you get "deeper insight", but you get a chance to add value by PROVIDING insights! By all means you should do this.
Agile is supposed to have dedicated teams where each member is 100% on the given sprint. Pubs is typically left out for two reasons. At the beginning everybody says there's nothing for pubs to do in the early phases, and pubs always has to participate in multiple sprints. At least for this case they have found something for you to do at the beginning. If you choose not to take advantage of this, it will reflect poorly on tech writers in general, IMO.
