Hi Kristi,
NIH, the National Institutes of Health, puts out a lot of nutrition and health
information. You might try them. People at NIH may also have some local
contacts for you. Call them and ask for an "informational interview" in
person or over the phone. Can't hurt to pick someone's brain who is in the
field you are interested in.
