Susan Fowler asked about good textbooks for a
university-level writing course. I really enjoyed
"Effective Professional and Technical Writing"
(Michael Keene, D.C. Heath & Co., 1993, 652 p.)
It's thorough, extremely well written, and quite
readable (rare for a textbook). Also inexpensive,
which will be a nice gift for your students!
