Unencrypted text is also referred to as "plaintext" (being the opposite of
"ciphertext".)

A quick Google shows that term widely used, but I can't say if it would be
the most appropriate for your audience.

"Plaintext" wouldn't be the appropriate term here, though, regardless of audience. Plaintext is the unencrypted version of text that has been encrypted. If it's sent in clear (my choice of term), it's not plaintext.
