How about some combination of:
- a stick-figure walking (as seen from the side),
- a stick-figure sprinting
- a stick figure digging in the heels to slow down?
Only the latter two would be necessary, but the
first one would be a good shortcut to "Normal Speed",
or "Default speed" if you have the real-estate on
the menu/button bar and don't want to force the
customers to step through all the increments to
get back to "Normal".
