I had this problem with Word files, large Excel files, a bibliographic
database file, and with graphics attachments that I was sending to people on
various platforms. So, as much as I wanted to blame Microsoft, it doesn't
seem to be localized to them. The conversion to a .DAT file also seemed
unconnected to the e-mail package, type of file, or receiver's e-mail
account (i.e., hotmail, AOL, ImportantCompany, etc.) I swear it's computer
gremlins out to get me.

The only way I've found to successfully send files is to compress them (I
use WinZip usually but in a couple of cases used a compression package the
receiver had) and then send them as attachments. When the person
uncompresses the file, it should open in the same format/package as when
compressed. Leastways, I've not had a .DAT file since.
