I always change these clauses by hand in the contract, or get a written
explanation and confirmation of exactly what this means and attach that
confirmation to the contract.

In reality, your company probably isn't interested in creative writing.
However, if you do contract technical writing for other companies, there could
be problems, especially if the other company is a competitor of your employer.

In a strict interpretation of that clause, your employer would own the
intellectual property rights to documentation written for a competitor. That
could get nasty.
