I work in a credit processing organization. They told me as part of the initial
interview and as part of the initial hiring orientation that they would be
running a credit check, to which I agreed. However, nothing was said about a
health records check. To the best of my knowledge, no hiring company has ever
checked my health records (where they would have found evidence of
Psychotherapy, fwiw).
Could it happen? Sure, but I don't think it is routine.

I would go ahead and submit the bills. All of the plans under which I have had
any sort of treatment, physical or psychological, seem to have a firewall built
in between the health benefits and personnel. You would need to consult someone
with a legal background to get a useable opinion on whether or not an employer
can have that information. I don't know. (I know I have heard horror stories
involving people who are HIV positive and hiring organizations, but I can't
verify that myself.)
