Open the PDF in Acrobat (not Acrobat Reader). File > Save As > Encapsulated PostScript (EPS).
Click the Settings button. You can start with the default settings, but I think the lack of a preview may be a problem in Word, so you may need to check the preview box. Tweak other settings as necessary if the results are not satisfactory.
This SHOULD give you a nice vector diagram in Word, but it doesn't always work that way.
If that doesn't work, File > Export > Tiff should give you a fairly high-res bitmap that will look smooth enough at normal resolutions.
