I guess I just know a rare breed of engineers. Funny, considering that I
know a *lot* of engineers.

The same can be said of engineering. You might be surprised to learn what
some engineers do.
Now, rather than unjustly insulting a large group of people that you'll
probably need to work with, how about a more positive tack:
"Granted, engineers need learn to organize thoughts and procedures to write
reports. However, that's a consequence of their work. It's not their
primary function; it's a necessary evil. It's not what most of them want to
do.
"On the other hand, it's what I do all the time. I do it faster, I do it
better, and I do it cheaper. I know what to look out for--things an
engineer focussing on the technology might miss.
"Now, given a choice, would you rather pay an engineer to do engineering, or
to write procedures?"
