How about "George...two weeks to create a credible document is not
reasonable. What are your expectations for this documentation?"

You can also ask him for examples of previous manuals he has produced that you can use as a model.

If he shows you one, you can say "Great - how long did it take your team to create that? Just to set some baseline metrics, you know..."

If he doesn't have any, you can mutter "Newbie" under your breath and get to work figuring it out for yourself.
