There's also the liability issue. If you put your name on it, you're asking to be included in the list of defendants if somebody spills hot coffee on their keyboard. By leaving your name off, you can plausibly disclaim any responsibility for the content of work-for-hire that was approved by your client.

That said, I have certainly seen commercial software manuals that credited authors and illustrators, whether in-house or independent. I think this is fairly typical in graphic arts programs, for example, where the book itself is an exemplar of what can be accomplished using the program.
