Lots that can't be done in FM. Little that can't be done in ID with enough plug-ins.

But the question is somewhat misleading, because someone whose job it is to produce beautiful books wouldn't be considering FM in the first place. And the grad student with no budget for expensive graphic arts software who just wants to typeset his or her thesis is unlikely to consider ID.
