You need to use the TouchUp Text tool. I don't have the latest version, and so I can't tell you exactly where the button is. But you're looking for an outline capital T (not a solid capital T). If you don't see the button, click and hold the solid black arrow button (TouchUp Object tool). This should open a flyout with the TouchUpText tool on it. Click that button to select it. Then you will be able to select a line of text at a time and edit it. You cannot edit continuous text (as in retyping a paragraph) in a PDF, though.
