Dave,

You need to use the TouchUp Text tool. I don't have the latest version, and so I can't tell you exactly where the button is. But you're looking for an outline capital T (not a solid capital T). If you don't see the button, click and hold the solid black arrow button (TouchUp Object tool).

In Acrobat Pro 7.0.1 it's located under Tools > Advanced Editing > TouchUp Text Tool.
