So what happens when you have an unnumbered list of
five steps, and the customer/client/boss says, "I'd
like to have that list numbered, please."

Why was this ever a question? He's paying for it. When
you're done making the last keystroke, it's his
property. You give the customer what he wants.
I started life as a commercial artist, so questions
like this are always easy for me. If the customer
wants an ugly painting, you paint it. Don't sign it
and don't list it on your CV, but do it. You wouldn't
be able to afford paint and brushes if it wasn't for
him.
If the boss is niggling you to death with a horde of
ant-size "number the lists" issues, that's a different
matter.
