There's a useless-for-most-people feature that lets you switch between
keyboard layouts (e.g., U.S. English vs. International vs.
French) if you press a certain keystroke. That keystroke is something
like Alt plus the left Shift key by default, thus easy to inadvertently
trigger.

I have been having a similar issue on an ASUS notebook running Vista.
Every so often, Word would switch languages and everything I typed was
coming out Chinese even though I never installed Chinese language
support. Closing and restarting Word readily solved the issue, but still
it was a pain.
Geoff's suggestion has now helped me locate and resolve the problem.
In the Regional and Language Options applet of the Control Panel:
1. Select the 'Keyboards and Languages' tab
2. Click the 'Change keyboards' button.
The 'Text Services and Input Languages' dialog box appears (sorry,
couldn't resist, with that other thread currently running!)
3. Select the 'Advanced Key Settings' tab.
There you will find a 'Hot keys for input languages' list. In my cause
Alt+LShift was mapped to switch to a Chinese (traditional) keyboard.
